This bodega in Jerez is not joking around. Bodegas Tradicion is something of an archivist, tracing back the family's long history, and making wines of quality, really some of the best (and fanciest) in the region.
This has had a long aging under flor in American oak, using the solera and criaderas system, giving it more body and texture than your average cheap & cheerful fino. It's super dry & salty but with lenghth and power and a real food friendliness. Drink it from a wine glass if you're feeling fancy, while snacking on nuts & olives, but also fish dishes, pickles, it's pretty flexible. A lot of work went into this sherry. Don't you dare put this in a cocktail!!!!
